Restaurant Onde is located in the Renaissance Palazzo Del Nero, overlooking the magnificent Giardino della Gherardesca, just across from the building housing the Four Seasons Hotel Firenze, a symbol of the city’s luxury hospitality.
As the Executive Chef Paolo Lavezzini explains: "We wanted to bring a restaurant to Florence that focused on fish, the sea, and the Italian coastline. In just 8 months, we managed to completely transform the space, creating the show kitchen, Onde, featuring a stunning Molteni. We chose a blue reminiscent of grey - a specific RAL color, Pigeon Blue - crafting an environment that speaks of the sea with discretion and elegance.''
"The equipment is a fundamental part of our work, and with Molteni, we are truly satisfied. Due to some logistical difficulties in positioning, the kitchen block arrived in two parts. When I saw it dismantled, it was a It was heartbreaking, but fortunately, I knew there was a happy ending.''
