Brasserie Dufour

Located in Lille, Brasserie Dufour, is the fruit of the passion and dedication of Thibault and Claire Dufour. This establishment highlights traditional French cuisine, relying on seasonal products and local producers. Chef Thibault Dufour, trained with gastronomy legends such as Chef Georges Blanc*** and Chef Christophe Bacquié***, offers cuisine combining tradition and creativity.

Among the treasures of Brasserie Dufour, the Molteni stove is more than 40 years old, and occupies a special place. Custom-made in Saint-Vallier in the Drôme in the 1980s, this stove is much more than a simple kitchen tool for the chef. It embodies a rich and moving history, having belonged to two-starred chefs before him: Marc Meurin**, with whom the stove obtained two stars in 1992 and 1998, and Eric Delerue*.

This Molteni line 1923 stove, custom-made according to Marc Meurin's demanding criteria, has passed through the generations. After 17 years spent with Chef Eric Delerue, the stove continues its prestigious career and in 2023 becomes the central part of the kitchen at Brasserie Dufour. For Chef Dufour, “this stove is a silent witness to the evolution of French cuisine”, a travelling companion who supports him in each stage of his culinary journey.

Chef Thibault Dufour has a real passion for Molteni stoves. For him, these jewels are synonymous with robustness and precision. The Chef particularly appreciates the manufacturing quality and performance of his stove, which allows him to create dishes of great finesse while respecting the authentic flavors of his research.
