San Martino Treviglio: a Restaurant, a Family, a Tradition

The dynamic energy of the Colleoni family in the construction of their historic restaurant (in the town of Treviglio in the province of Bergamo) has led to the decision to create a solid partnership with Molteni kitchens.

This is a restaurant where the quality of basic ingredients, professional skill and a constantly renewed setting (as of this year the customer can dine in the garden, and next year the family will open the finest junior suites) provide satisfaction and excitement for enthusiasts of “bien vivre”.

Seven main reasons were behind the decision to have a single piece made to measure by Molteni at the beginning of 2006.

“We want to feel a deep passion for our work and continue our family tradition in managing the San Martino, as we affectionately call it. To make it ever more satisfying to our guests, we decided to take up this challenge starting from the heart of our restaurant: the kitchen, the beating heart, the driving force, the instrument, the column upon which all the complexities of a restaurant lie”.

2. Customization

“We decided to go with Molteni because we were looking for something unique, custom-shaped to meet our needs and our personal taste. Spending six months discussing how to customize our Enterprise 101 was a unique experience, and once it became reality it would remain in our history as a vital part of our lives”.

3. Tradition

“The tradition of these machines for us is unquestionably an added value, since it’s a value we firmly believe in, whether it concerns ourselves or the tools we need to use on a daily basis. Tradition means building your own story, one day at a time, which before you know it carries you off to where you can achieve results that were previously unthinkable, and that are modern and far-reaching”.

4. Technology

“We decided to have technology play a major factor in the design of our space-age kitchen by including an induction plate with a big surface, an induction wok, two quick and highly precise driving forces behind our cooking. At the same time, we felt it important not to neglect traditional aspects, which still have a fundamental role for certain types of cooking and preparation”.

5. Craftsmanship

“We personally went to Saint Vallier, France, to watch as skilled craftsmen created this jewel for us, just as our guests can watch us work in the front kitchen when they come into our restaurant. The craftsmanship of our work needs to come from something with the same roots: the craftsmanship in the construction of our kitchen”.

6. Exclusiveness
